Default looking recipes using honey...

We get alot of honey and I'd like to find some 'tried and true' recipes using it. Esp I'd like to find a good granola recipe using honey!

i like to mix honey with creamy pnut butter and use for a dip, for apples, grahams etc etc

not really a recipe, but its yummy

I love cooking chicken with honey. You might want to check for ingredients online. I am not that sure about the exact ingredients but you could just try it out.

That is just simple with the use of chicken fillet cooked over honey and topped with some sesame seeds. Though not a lot of people are cool with chicken cooked with honey as they don't usually go for something sweet with it.

Sticky Chicken

1 package thin chicken breasts
Sea salt and black pepper
3 – 4 tbsp oil
1 head of garlic, halved horizontally
Few sprigs of thyme
Splash of sherry vinegar
2 Tbsp soy sauce
3 Tbsp honey
1 lemon, finely sliced

Season chicken with salt and pepper and heat the oil in a large sauté pan. Brown the chicken pieces in batches over a high heat with the garlic and thyme for 3 mins on each side, until golden brown. Return all the chicken to the pan, add the sherry vinegar and bubble until reduced by half. Drizzle over the soy sauce and honey and shake the pan to mix. Pour in a good splash of hot water and add the lemon slices. Let the liquid bubble and reduce down until syrupy (about 10 mins).

Granola Bars

• 2 cups old-fashioned oatmeal
• 1 cup sliced almonds
• 1 cup shredded coconut, loosely packed
• 1/2 cup toasted wheat germ
• 3 tablespoons unsalted butter
• 2/3 cup honey
• 1/4 cup light brown sugar, lightly packed
• 1 1/2 teaspoons pure vanilla extract
• 1/4 teaspoon kosher salt
• 1 cup chopped pecans
• 1/2 cup chopped dried apricots
• 1/2 cup dried cranberries
Directions
Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
Toss the oatmeal, almonds, pecans and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
Reduce the oven temperature to 300 degrees F.
Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the apricots, and cranberries and stir well.
Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.

Honey Chicken Kabobs

Ingredients
1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 teaspoon ground black pepper
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
2 cloves garlic
2 small onions, cut into 2-inch pieces
2-3 bell peppers in any color, cut into 2-inch pieces
skewers
Instructions
1. In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours.
2. Preheat the grill for high heat.
3. Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
4. Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

Honey Chicken

1 1/2 lbs boneless skinless chicken breasts (cut into 1” chunks)
Oil (for deep frying)
Batter
4 tablespoons cornstarch
1/4 cup flour
1 teaspoon baking powder
1/2 cup water
1/2 teaspoon salt
1 egg
1 egg white
Sauce
1 1/2 tablespoons oil
2 teaspoon ginger (minced)
3 tablespoons garlic (minced)
1 teaspoon salt
3 tablespoons honey
1 teaspoon rice wine vinegar
1/2 cup water
1 teaspoon cornstarch (mixed with 1 teaspoon water)
Sesame seeds (for garnish)
In a large bowl mix all batter ingredients together until smooth. Cover and allow the batter to sit for at least 30 minutes. Add the chicken to the batter tossing to coat.
Heat a deep fryer to 350 degrees. Fry chicken bits in patches for 2 minutes or until batter becomes firm. Drain on paper towels.
To make the sauce. Heat 1 ˝ tablespoons of oil in your wok. Add garlic and ginger and stir fry for 30 seconds. Add salt, honey, vinegar, and water. Mix well. Combine 1 teaspoon of water with 1 teaspoon of cornstarch. Add to the sauce and Simmer for 2 minutes.
Coat chicken with the sauce and garnish with sesame seeds. Serve with rice.

Honey also makes a delicious glaze for roast pork, sausages or parsnips. Heat destroys some of the quality of good honeys, so it is better to use specialist honeys in uncooked foods in which you can taste the difference.

Sometimes, instead of sugar, I used honey. It can also be an alternative if you don't have a sugar or if you want to have your dish a unique taste.
