Mexican food sounds so good! I've had Chipotle and taco salad this week, but it's just not the same without cheese!

We're having Easy Crockpot Chicken. I tossed everything in about 12:30 and it's smelling yummy! I'm hungry, too, and Ed won't be home for at least another hour. I may need to go get a tiny little snack to hold me over.

ETA: I had fajitas one night, too, but without the tortillas. And no cheese. Again, just not the same. It's hard to live in the heart of Tex-Mex land and not be able to eat tortillas and cheese! It's torture, I tell ya'! Torture!

I wish it was cool enough here to have chili. We're having "cooler" temps, but it's still in the 90's. It won't be cool enough for chili for at least another month.

Suz, can you NEVER have corn/cheese/other no-no Nazi foods EVER or could it be VERY occasional?
I mean what would happen?
It's not like you're allergic to those things.

Like if I have ice cream I'm in physical pain so it's easy to stay away from it.

Well, besides the obvious chicken, there is Rotel tomatoes, stewed tomatoes, chicken bouillon, onion, and a bunch of spices. Page 158 of the LOSTie cookbook (had to look it up today). It's one of my mom's "toss everything in the crockpot and see what happens" creations. I didn't have any stewed tomatoes, so I used two cans of Rotel. Gonna' be spicy!

It's not like you're allergic to those things.

Like if I have ice cream I'm in physical pain so it's easy to stay away from it.
I can have them, but I know I'll pay a price for it. Like a couple of weeks ago I had a mini Blizzard from DQ. I felt like carp for three days - dead tired, absolutely NO energy. Complete 180 from how I had been feeling. It sucked! So not worth the short term enjoyment of eating the ice cream. It's from the sugar. Anytime I eat anything sweet - BBQ, or too much fruit, or too many carbs (turn into sugar in the body), I feel like crap for days.

If I eat bread I get stomach pains - burning like acid reflux for hours on end. It's not severe, just uncomfortable. It can last for up to 12 hours from just two pieces of bread. I'm going to talk to the gastroenterologist about this when I see him in November. Really makes me wonder if there could be a real celiac sensitivity going on.

The other stuff I don't notice a drastic difference. I'm thinking I'll work them back into my diet gradually at some point in the future.

Ok I didn't realize it was that bad for you.
THat's how I feel about dairy. I mean SURE I want ice cream but it's just not worth it.
I want milk for ceral more than ice cream...but it's just too painful and gross.

This hasn't always been this way for you, has it?

I'm so jealous of you and your cool weather!! Chili sounds really good.

We eat together on the Friday night of varsity home games. We've been doing this for about 5 years now. Usually it's just mine & Phyllis' families, but 2 or 3 times during the football season we'll have 2 or 3 more families join us. It's become a tradition.

Cheese and tortillas would be hard to give up!! I'll say a special prayer for you because it is hard being in Tex-Mex land and not being able to enjoy certain food items.

What do you put in your Easy Crockpot Chicken? My recipe is chicken thighs, Ro-Tel and chicken taco seasoning. Easy Peasy!

I need a little time to clean out the downstairs bedroom....

Man I want to redo the downstiars bathroom.
It's SO funky.
I feel like it's never clean even if I scrub. Ya know?
The fixtures are old and funk...the whole thing is a giant mistake!

You could make it with a mild Ro-Tel. It would still have some flavor, but not a lot of kick.

Dang, this stinks! I'd hate giving up fruit--that is one thing that I eat a lot of. I didn't realize that you were having so many problems with this. ((hugs))

Ok but you may want to use the upstairs bathroom.
Slightly less funky!

The floor is 1 sheet of linolium (sp? not in the mood to check it), black counter, HORRIBLE vinyl wallpaper, yellow (yes YELLOW) tub, toilet & sink.

Litereally a handful of ingredients and no work.

Nope. The water gets turned off so the pipes don't freeze. The water source at the top of the mtn gets shut off too. So, even if it was heated all winter, there wouldn't be water for the bathroom.

The average low temp in December is -11. EEEK!

I wait for it to cool, then pour it into a plastic container with a lid and throw it away. I don't fry anything often enough to strain an reuse it. I wouldn't want to keep used oil too long.

My mom used to dump it in a corner of the yard. I'm not so fond of that. I think it smells. Plus, it can't be good for the soil.

When you get to the bottom of the Google Reader list of your feeds there is a link that says "See your recommended items" some of them are STRANGE, bt some are awesome, when I am bored I scroll through them
