I bet it's not you, Cindy Linda!! It's probably just the recipes.

I have noticed that there are times I LOVE a certain recipe when someone else makes it, but then when I make it, I'm not happy with it. I feel like it's too bland, or too mush, or too whatever.... I think it is because I judge myself so much harder than I would someone else.

I forgot to add lasagna to the list.

My frozen pastas have always turned out. I put them in a disposable aluminum baking pan and seal them really tight.

The tortillas also turn out ok, but I've noticed that if there are any tortillas at the top of the king ranch casserole, they get a little too crispy when I bake it. I try to cover all the tortillas w/ sauce and cheese.

For a lasagna, I don't cook my noodles before hand--I just use them as is. You can find "pre-cooked" noodles (something like that--I can't remember how it's labeled on the package) but my store rarely has them. I just use the regular noodles. I cook all of the meat, etc, and do my layers.

For the king ranch, I cook the chicken and keep everything else is "as is" until I remove the casserole from the freezer to cook.

Ok I started reading this thinking maybe you were talking about a bikini wax (because this topic has been covered a few times) and I was thinking where the heck is the lambchop area??? LOL!

I found some for souvlaki (kabobs) and maaaaaaaybe one for lemon rice pilaf. I'm not so sure about this one yet.

I made some really tasty beef kabobs last week.

I wasn't sure if we'd like the marinade, but surprisingly enough, everyone--including picky Cupcake--ate the kabobs! Travis walked in right after I finished making the marinade, and he asked who had been shooting guns....I guess it smelled like gunpowder to him!

Let me look for the recipe, and I'll share it with you. Other than kabobs, I have not made anything greek.

This is the marinade that I used for the beef kabobs. I also have marinade recipes for shrimp and chicken, but I haven't tried them yet.

Beef Shish Kabob Marinade

1/3 c. soy sauce
3/4 c. salad oil
1/8 c. Worcestershire
1 tbsp dry mustard
2 tsp salt
1 tsp parsely
1 1/2 tsp ground pepper
1 crushed garlic clove (I used 2 minced cloves)
1/4 c. lemon juice

Blend all ingredients together in a blender for 1/2 minute. If not using right away, pour in jar w/ tight lid and refrigerate.

I bought 3.22 pounds of top sirloin steak, and it was PLENTY. I put all of the meat in a zip loc bag and poured the marinade in the bag. The meat/marinade combo stayed in the bag for almost 24 hours. If you want to baste your kabobs while they are cooking, save some UNUSED marinade in a jar.
Once you prepare your kabobs, you can brush them w/ the marinade. When you are grilling them, turn them over and brush w/ marinade.

For the kabobs, I used beef, 2 green peppers, 2 red peppers, 1 purple onion, chunky pineapple, and cherry tomatoes. I would have also used some zucchini, but our HEB didn't have any that looked decent.

This made 8 large skewers of kabobs, and there was meat left over that Darren grilled on the pit. It was enough for five people (me, darren, the kids, and my MIL) and there were leftovers for my lunch for the next 2 days.

Good morning! Unfortunately, this is just a quick drive by again. I've got a meeting with my VP this afternoon that I have to finish preparing for, and a lot of other work I need to do. I really want to leave on time today and meet my friends for happy hour because I've been working so many hours lately and could use a break. I'll likely still have to bring work home for after happy hour (it'll have to be a short one today) but it'll still be nice to get out of here.

I'm working from home tomorrow afternoon because the new cable company is coming, so that'll sort of disrupt my day, and then I'm taking Friday afternoon off to go up to MA and help with the move. Not the best time to be out of the office, but c'est la vie.

Good morning!

No time to catch up. I need to get myself and Jax ready to go. I have another dr appt today. Another ultrasound (get to see the heartbeat) and bloodwork.

I am all nervous. I was nervous last week because I was afraid the baby wasn't where it was supposed to be. I felt so much better after seeing the ultrasound and hearing from the tech that everything looked perfect. Now I am just nervous about not being able to see a heartbeat. I am still in such disbelief, I guess.

Hi and bye! Just stopping by while I wait for an email to print. I have some errands to run this morning, but I'd rather just crawl back in bed. I feel like crap on a cracker this morning. Couldn't go to sleep last night, Sam had bad dreams, Jess decided she needed to text us a play by play of her trip to the airport starting at 5:00 am (she's flying to SC for Bryan's graduation), and then the kids were up at 6:00. I tried to go back to sleep, but Ed called at 7:00. To top it all off I have a horrible sore throat and my head feels like it's filled with cement. Waaaaaaaaaaaahhhhhhhhhh!!!!!!!!!!!!!

Okay, I'm through whining. I hope everyone is doing better than I am this morning! I'll try to check in later. Y'all have a great day!
