making a huge chicken in the crockpot today hoping to get some tasty stock to use for Thanksgiving. None of my pots were the right size but I am now thinking that its going to over flow. We'll see. I guess I should have gotten the chicken already cut up instead of a whole bird. I need the fat off the top for gravy too. My 89 yo grandmother isn't making it for me this year since she moved to her apartment. She got rid of most of her heavy cooking pots when she moved.
Making chicken stock is too much work. What a mess. I dirtied too many dishes and I still need to make dinner. I planned to use the chicken somehow but I am sort of over cooking today
well it's Thanksgiving week, are ya'll ready? I have my groceries ready. I need to chop the onion and celery but that's about all I can prep in advance. My mom has most everything else. I got DD's tofurkey ready for the crockpot. She guilts me to make her that. I put a tofurkey roast in the crock with a can of veggie broth, a can of cranberry sauce, and some onion soup mix. It self bastes in the crock and gives the tofu a good flavor. We told my meme not to try and make pies, and 3 sides like she tries to do every year. I thought we were getting away with it but she told me yesterday she is making the sweet potatoes, brocolli rice and cheese, and a pecan pie. LOL. My mom won't be happy. WE are sick of trying to get it all done. Every year my mom wants to eat at a restaurant instead. LOL. Not gonna happen
I wish there was a way to peel the potatoes in advance. I hate peeling them. We do 12 lbs because no matter how many we make, they always get eaten and then there are no leftovers.
I'm getting by pretty easy this year. Everyone is coming here but bringing most of
the food. I only have a couple of things to cook. But, I get to clean the house, get
napkins, paper goods, etc.
In other news, Blake has a broken wrist bone and has to wear a cast for 6 weeks. It's from the fall he took back on the 11th. The ER missed the fracture in the scaphoid bone. It's a hard bone to heal because there is not a lot of blood flow to the area
