Decided to try those 2-ingredient lemon bars that are on pinterest. Actually had a hard time finding ingredients though because we don't get canned lemon pie filling here. You either make it from a powdered mix, or you make it from scratch (my preferred method. Have a recipe from one of my paternal aunts that is awesome.) I did find a jar of almost pie-filling lemon stuff in the jam aisle, so I'm trying that. I tasted it though, and it isn't as lemony as I would like. If these turn out this time, I think the next time I would go ahead and my my own lemon pie filling from scratch - it has much more lemon flavour.
In just mixing it up though, I have learned something. Whatever is in the lemon pie filling activates the rising agent in the angel food cake mix. so the batter starts to rise while you are mixing it. Use a much large mixing bowl than you think you will need.
Now I have to wait for them to cook & cool so I can taste test.

And um............. since I didn't want to heat up the big oven, I decided to divide the batter into two 8" square pans instead of using a 9x13. I am questioning the wisdom of that decision. The squares have risen up past the edge of the pan...............

I need to think about dinners for this week and do some pre-cooking and/or planning if I don't want to have to cook when skating is on. (Or at least, minimal cooking. Boiling rice or pasta or sticking a 'tater in the microwave is doable). Plus, I've eaten like crap the last two days. Need to eat some proper meals.

They have hamburger on sale at the one grocery store this week. Might buy a big family pack and do something with that. Tacos, or 'sketti or lasagna or something.

I'm trying to decide if I should go with 7 or 7.5. I'm a solid 7.5 unless it comes up high on my toe or narrow. Then I need an 8. This says go down one, but since I can't try 'em on, I can't tell if I should go down to 7 or assume an 8 down to 7.5.

Hmmmmmm........... not sure what I think of these "bars". At least the way mine have turned out, you definitely could NOT cut & serve them as squares (though maybe when they have completely cooled, that will change. Right now they are still warm.). The top is like crispy/crusty angel food cake, while the bottom is more puddingy. Not quite as lemony as I'd hoped, and a slight aftertaste.

I've never tried them, because they looked too flat for back support. Now I'm seeing some pretty nice insoles in the ad. Might need to try some on. They are cute.

Oh, and when I moved the pan from the oven to the cooling rack, the middle was a bit "jiggly" IYKWIM? I cooked the second pan a little longer, but still got the jiggly thing and had to pull it out or risk having the top & sides burn.
Also have to use a knife to separate the the bars from the sides of the pan.

Finally remembered to watch The Good Wife and then the kids came home...an hour plus later than expected. Then they had to get ready for bed right away; not a great thing on a "lose an hour" weekend. So now trying to watch The Mentalist but missed too much of the beginning.

I like that tea set too. I was actually looking at dishes earlier today. Ate at a friend's last week that had heavier stonewear and it made me miss my old dishes. I loved that pattern but too many were breaking and I couldn't find replacements.

so final count for this weekend is 9 cards and 7 tags. fetching photos and will work on a blog post... but, one of them is an House Mouse image Tami. ( all you see is a coffee mug with the mouse head over the top and the hands on the rim. its not a full body mug shot so if you didnt know it was a mouse it could pass for a hairy something? )

Dd2 just came out crying...she has a tummy ache. Went to the farm this weekend with sh's sister...there was a bridal shower yesterday for their niece. So a weekend of eating carp and no sleep (they went OUT to dinner at 8:30 last night and her bedtime is usually 8:30).

I only used to send them to my two Grandmas but since they are both passed on now, I feel like I should send one maybe my uncle that used to live with my mom's Mom. He doesn't have any offspring and feels alone so...and if you're gonna make one, what's a couple more...
