Michelle, how do I dry the herbs?

And please... how do I make pesto? I like pesto... but have only had the jars of it I have purchased at the grocery store.

Pesto Recipe : Ina Garten : Recipes : Food Network

Pine nuts are expensive, so I don't use them. If I have walnuts I will put them in.

Freezing pesto is very easy...I use either small plastic containers or glass 1/2 pint jars. If you use the jars...leave a bit of room for expansion. I have even used ice cube trays for small amts of pesto to add to italian dishes.

If you are roasting a whole chicken, you can put big sprigs of both in the cavity while it roasts.

Or just dice and sprinkle on...if you are baking it with the skin on, I would drizzle on some olive oil and sprinkle with chopped herbs. Since its fresh herbs, the amts are more than if you were using dried herbs.

Rosemary goes great with roasted taters.....

Drying herbs is easy. Cut as long as possible, tie stems together and hang upside down til dry....store in air tight containers.


Prob what Michelle said, by now...lol

I make dough, and roll it out, spread a light layer of butter or olive oil, than sprinkle with herbs, roll it up, than put in a bread pan..rise...bake. YUM

I make crescent rolls, when the weather is right... they need to rise so if it's too cold the recipe doesn't work. I could sprinkle them with herbs and have herbed crescent rolls.

No, I would do the microwave drying AND the freezing when the herbs were fresh. The only thing I would freeze now (to keep them longer) is are small things, like the hot peppers my DH is growing. I don't think I'll be canning anytime soon!
I liked the microwave drying better - it keeps the fresh taste of the herb for a L-O-N-G time. That way, you can put the herbs aside (when you harvest them) if you're not going to use them right away.

And Jeanette - those crescent rolls sound YUMMY!!

I'm not sure about how long - I think time varies (different microwaves may take different temperature / amount of time).

OK - here's an article about drying herbs. The 5th paragraph tells you about drying herbs in the microwave.

When I dried the herbs, I had only the herbs in the microwave - nothing else. And I also could try to dry only one type of herb at a time (so scents / tastes would not blend). I used paper towels like this article says to use. It has some REALLY good things about drying herbs.

Don't know about that Jeanette- 2 dogs, 2 cats and a stay at home husband- who usually cleans, but I guess since I'm home he's decided not to, and the little cleaning that has been done this last week has been by me. I've been concentrating on cleaning stuff not needed out, not cleaning. I'll worry about that when I've gone through the house getting rid of stuff!!!
