Here's a good goat cheese recipe. We had them at a tea room and I fell in love with them and got the recipe.

Olive Stuffed Goat Cheese Bites


1 (4.5 ounce) jar large Spanish olives stuffed with almonds, drained
6 ounces goat cheese
4 ounces cream cheese
Cup toasted almonds, finely chopped

Place olives in colander and rinse under cold water. Pat dry with paper towels.
In medium bowl, combine goat cheese and cream cheese. Mix well. Form a rounded teaspoon of cheese mixture into a small ball, and transfer to parchment lined baking sheet; repeat with remaining cheese mixture, making 24 balls in all. Chill for 30 minutes or until firm.
In each ball, make a small indent with your finger. Place an olive into the indent and mold the cheese around the olive. Roll back into a ball shape with the olive completely encased in the cheese.

Place the toasted almonds in a small bowl and roll each ball to coat. keep the balls covered in the refrigerator until ready to serve. Serve cold.

Note: for a milder more kid-friendly variation, feel free to omit the goat cheese and use all cream cheese.

Yummmm - sounds decadent Sybil.
Jen we don't have Sobey's on the Coast, but perhaps they carry the smoked cheese
in our IGA stores. I'll have to look as it sounds delicious. Thanks for the tip.

I looked it up.

Drunken goat is soaked in red wine for two to three days, giving the outside of the cheese a thin purple rind. The rind typically remains fairly soft and pliable, just like the texture of the actual cheese, and is edible (although whether or not you actually eat the cheese rind is up to you).

I figured as much. We took our grand-dtrs out for lunch today, as they were off on a Pro-D day, and I asked my DH what Drunken Goat cheese was. He had no idea, but said he didn't think they got the goat pixilated. LOL. But we did have a silly giggle with the girls on our drive out.

Yummy recipe. I do an olive-nut spread that is very similar. It's one of my snack favorites.
Chopped green olives (i jar of chopped salad olives, drained but reserves some of the liquid), cream cheese(1 package) and chopped pecans (the more the better....about a cup to start, but I just eyeball it). Mix well, using some of the olive juice if necessary to give it a good spreading consistency. It's great on crackers or a good nutty whole wheat bread.

Now I'm in the mood for it, and will have to make some for snacking. yum!

Your spread sounds wonderful, might be good stuffed in celery. YUM. I am going to EAT now.

And you can like blue cheese if you want to and it is fine with me. It just isn't my thing. I am just now learning to eat sweet potatoes and pumpkin after not liking them all my life. Who knows, I might find blue cheese to my liking after all if I tried it again.

My sister used to not like yogurt. Now she does. That's her benchmark for trying new foods now. She's says anything new could be her next yogurt. She might not like it at first, but give her a couple of years and she might grow to love it.

My youngest son used to hate anything green except Jello. Now he will eat almost anything that doesn't eat him first. He has lived by himself and cooked for himself for a while now, and is much less picky. He even eats brussels sprouts.

I think yogurt might be more palatable if it had a prettier name. I love yogurt but that name just doesn't match.

What kind of recipe are you looking for? Snack, main dish, dessert? I'm sure we can come up with something fabulous for you.

I've been in the kitchen this morning - kielbasa and cheesy potato casserole ready for dinner tonight and 2 pot roasts marinating for family dinner tomorrow. All I have left is potato to peel. I think I'll craft a little and have a second cup of coffee before DH gets home - he's due in about dinner time.

Joyce that casserole sounds like something that would EAT! I don't get to make many casseroles since it is just Himself and me. They are all too big, and Himself is not fond of leftovers. Sometimes I can half a recipe but sometimes I can't. I have a hard time halfing and egg, you know what I mean.

A little bit of everything. I am trying not to go back to work since I quit Michaels. Most of the items were sewn or painted, with a small amount of jewlry (because there are always so many jewelry vendors I choose not to do so much) The sewn items are mostly purses and wallets, aprons, wine glass slippers, microwave neck warmers, polar fleece neck cozies. etc. My next step is a website. Here is the recipe. I use a two pound bag of frozen hash brown potatoes (cubes, not slivers) and double the rest of the ingredients to feed a crowd and/or have some leftovers. This might be the right size for a couple of meals if you make it as written. My guys like it with some hot crusty bread and a salad.

Cheese Potato & Smoked Sausage Casserole

Ingredients
3 cups idaho potatoes, peeled, boiled and cut into cubes when cool, approx. 1 lb
4 tablespoons butter
4 tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, diced
1/2 cup sharp cheddar cheese, shredded
1 lb skinless smoked sausage
1/8 teaspoon paprika

Directions
Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
Bake in preheated 350F oven for 35-45 minutes (watch, until golden brown on top).
NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.

Default Fall chores

Well a little off the beaten track of food for fall, but definitely a fall chore most of us have in the garden. I say us, but really it is my dtr, s-i-l, and grd-dtrs chores. They went out today with Charlee to clean up the fallen leaves. One of the photos is off my dtr. raking up, and the other is of the girls (at play). The dog was in her glory. Her tail was wagging 50 miles to the minute and she was jumping into the leaf piles, getting mouths of leaves and tearing around the garden. She had a blast out there. Gorgeous day it was too.

I wish we could bottle that energy and drink it for ourselves! Our Charlie will take a toy and run around with it and toss it and chase the other dogs and just has a blast. It is so good to see him happy and playing after all that time of sitting cowered down and watching warily to see what we would do to him next.
I woke up in the night last night to snoring in my ear, and thought "what in the world?"
I was on my side, and he was snuggled up to my back with his paw over my shoulder and his nose and face right up against my neck, and was snoring in my ear. I said "Charlie, stop snoring." and he moved a little bit, and the noise stopped. I just went back to sleep.

I wish that worked on Himself. Mercy!

The only time he really freaks out on me is if I pick up something that he thinks will hurt him. I have to watch how I hole a paper towel roll on the way to the trash. He jumped up and whined and ran from me one day when I picked up a yardstick to measure something. I can't imagine hitting him. He never does anything bad. Some sick person must have mistreated him before. But I showed him the yardstick laying on the floor, picked it up and went to him and just touched him with it, then rubbed him a little, and then started rubbing it on his back. Before long he went belly up for me to scratch his belly too. Our vet says he just has some bad memories and may never overcome them. But we are working on it...............

I think I'm coming down with a crud of some sort. I have a really sore throat and I'm checking my temperature. I'm gonna get my winter cold over with before the holidays and avoid the rush. One pot of lemon tea is next on my agenda.

I had a fever last night, but I don't have it this morning. Throat is still sore so I'm keeping on with the Nyquil and lots of liquids. I don't have the time or the inclination to become really ill so I'm pretty aggressive about gertting rid of whatever bug I have picked up.

Thank you for asking - how about you? You've been pretty busy with real life and quiet on the threads - any light at the end of your tunnel?

Good Joyce, just be aggressive and throw some honey in with the lemon tea, or better yet, throw a little something extra in the hot tea. That is what I am fixing right now. Lemon tea with honey. I have to take DS to scouts tonight, so no toddies until bedtime. Sister said to skip the tea and just chug a shot of bourbon - I just laughed.

Sorry you are still feeling bad, Joyce. Chicken soup is supposed to work miracles on sore throats and coughs and stuff. I am sure everyone has her own remedy. My mama used to make us drink equal parts honey, lemon juice, and bourbon and it worked wonders. In my case it didn't stop the cough, just made me not care if I coughed or not.
