Lyn B's Peanut Butter Cookie Recipe:
1 C Shortening
1 C Gran. sugar
1 C Brown sugar
1 t. Vanilla
1 C Peanut butter (I used crunchy)
2 C Sifted flour (I don't sift my flour)
2 t. Baking soda
1 t. Salt
Cream shortening, sugars and vanilla. Add eggs; beat thoroughly. Stir in peanut butter. Sift dry ingredients together and stir into creamed mixture. Stir in mini chocolate chips as an option. With a teaspoon of dough form into walnut size balls. (I use the smallest Pampered Chef cookie dropper thingy.) Place on ungreased cookie sheets. Press with back of a floured fork to create a criss-cross.
Bake in a 350 degree oven about 10-12 minutes or until lightly browned. Makes 5 dozen.
