I've only ever made peach pie with fresh peaches, but I use the peach jello method. It's quick and easy but everybody loves it. You could try it with thawed peaches.
1 pkg. (3 oz.) peach Jello
1 1/2 c. hot water
1/2 c. sugar
2 tbsp. cornstarch
Baked pie shell
Cook Jello, water, sugar and cornstarch together. Cool slightly. Pour over sliced peaches in a baked pie shell. Serve with whipped cream.
I would drain the peaches as they thaw and use that liquid in place of the water.
