I make my apple butter with the applesauce I make from apples from my trees. But you can use store-bought natural applesauce that has no sugar in it. I also make it in my crock pot. Doing it on the stove makes it too easy to burn...especially for me!
Crock Pot Apple Butter
2 quarts applesauce
2 cups cider
1-1/2 cups honey (I use less)
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
Cover, cook on low overnight (8-10 hrs) or until dark brown color.
Remove lid and cook on low until thick. It should round slightly in a spoon and show a glossiness or sheen.
Pack while still hot in hot, sterilized pint or half-pint jars, leaving half inch headroom. Adjust lids and process in boiling water bath for 10 minutes. (ten minutes is for your altitude, not mine) Remove and let cool.

Nope....we use the slow cooker and just cook them down for hours and then add some sugar and cinnamon. Then we have a food grinder we put them thru. Easy peasy!!!!

Well, I saw going to sit down and do some black magic this morning, but instead I'm going to be dealing with a chalk disaster I don't even quite know how it happened...one minute I'm carrying them the next they're crashing onto my table. I don't know how I'll tell them all apart.

Making apple butter is a big event here in Hermann. Some actually cook it in a cauldron outside! Tourists actually come for the event. There are lots of apple trees (something I had never seen in Houston!). We have to remove one of our beloved maple trees that is dying and I told DH that I wanted a BIG apple tree to replace it.

We peel, core, and quarter them and put in LARGE pot with a little bit of water and honey in bottom. Not much as they will get juicy really quick.. We cook down to almost mush and add in cinnamon, nutmeg, cloves and allspice to your tastes and keep cooking until wooden spoon stands up in center of pot on own. Then put in jars and process in cold pack canner. I also make it with pears and it is every bit as good...

Well, I never did re-tackle my chalk box...they're all in spaces, but having looked at the picture I know some of them are wrong. My excuse now is that it is dark and I'm waiting for natural light. I did however get 20 more cards into the mail today! I also sent my dad one of the care-giver thanks cards that I made and as my mom started her radiation today I sent her one of the cards that I'd made with Scripture verse that couldn't go to the cancer center. I wanted to take a picture of all the cards laying on the table before I sent them, but was at the library with no camera. They really looked pretty in their cellophane wrappers! I had 2 ladies come and comment on them while I was there working with them.

Gail's ham sounds delicious, and Sheri's apple butter sounds manageable - pretty much like a really thick applesauce, with honey instead of sugar.
I'm up to date on the challenges but have been missing out on the chat - visiting family over the weekend and life in general just getting in the way and getting me down .
These days I just make a quick applesauce in the microwave if all I want is enough for the meal - peel, core, chop, add a tablespoon of water and cook till soft. Stir in sugar, spices and maybe a little bit of butter - walnut-sized piece is what I'm talking about.
When I was growing up and we had a lot of windfalls, we'd just clean them and then chop them up, peel, core and all, then steam them in a double boiler and put them through a food mill, then add sugar and spices to taste, plus butter. I think the peels make a difference, it comes out much creamier and thicker .
Had an unexpected guest on Sunday after being out all day Saturday, and a real time-squeeze to cook and eat between church and him needing to get to the mainline train station for an afternoon train. Easy to expand a vegetable and noodle stir-fry, but I was stuck for a quick dessert till I remembered a microwave upside-down cake I used to make. Upside-Down Chocolate Pudding Serves 4
2 tblsp butter
2/3 cup soft brown sugar
1 can/2 cups pear halves, drained
3 tblsp chopped nuts - I use pecan or walnuts, and don't bother chopping them.
Cake:
4 tblsp soft butter
1/4 cup sugar
1/3 cup plain flour
2tblsp cocoa
1/2 tsp baking powder
1 egg
1 tblsp water
Place butter and sugar in a 7" soufflé dish and cook on full power for one minute. Stir to mix, then arrange the pears and sprinkle the nuts in between.
Beat all remaining ingredients together till well mixed. Spoon the cake mix over the fruit. Cover the dish with a piece of kitchen paper and cook on full for 6 minutes. Leave to stand for 2 minutes, turn out and serve with cream or pouring custard.

I did pumpkin butter last yr for first time and it is yummy on fresh biscuits...could look up the recipe if you want. It wasn't to hard...I just remember it tended to splatter a lot so use a BIG pot...heehee
Sabrina, that chocolate upside down is going to be a hit at work, I'm sure....I have to take chocolate in some form to work about monthly to keep the natives from getting to restless.....

We have a young missionary coming on Saturday and I am trying to shovel the construction dirt out of the house. Did I mention that I hate housework. It's counter productive and a gross waste of artistic abilities!
I believe I am now 10 cards behind - bumming me out! I have company coming this weekend also - wish they were stampers!!

I think I've made a grand total of 5 so far. And considering I made 36 cards last year that's kind of hard to swallow. I'm really trying to not tell myself that there's some way I can get them all done because I'm pretty sure that even if I could manage it that I should do other things, like sleep.

I'm only 2 behind!!! Well 3 with today's....but I have time to stamp while hubby's workin' and before we see if we get home thru the snowstorm! I'll join Victoria in a cuppa and get inky!
I still get 3 year old snuggles. He was super squeezy when I got back this weekend. ANd he's still young enough that when he's running around playing he swings by for a smooch every so often. Love that
I'm happy to say that I just found time in my "busy as a bee" schedule...to upload some cards. So...now I am down by just 5 cards. Speaking of bees...I still have to do that bee challenge from a few days ago. But the biggest challenge card I am holding off on...is the window card chalelnge from the 6th. Anyone else that far behind?
BTW, I think Physical Therapy is really, really helping me. And, I went to ortho on Friday. He says he doesn't seen arthritis or the fracture in my knee/ankle. So...good news...I'm getting a new doctor soon. haha. Oh...and...I think that I'll be getting an MRI in a month. But...at least the fracture is ruled out..right?

Mailed off 3 weeks worth this afternoon...I am officially on schedule now - just have to to do today's card when I get home from work. It will definitely be easier to get the pics loaded and posted, etc. from here on out.
Was sitting in a meeting at work and came back to my office to find a dozen long-stemmed red roses waiting for me...from my husband (of course) for no apparent reason. I like it. Between you and me, I think he's looking for "brownie points". LOL

Hey everyone... thought I'd pass back through... I'm so far behind, but after reading these past few posts, I don't feel NEARLY so bad anymore!! I have been and am still so out of commission with my headaches, but not dwell on that. I am enjoying reading everyone's comments... I feel pretty good today & maybe will get to work on a few cards tonight while the World Series is on TV, although my TV in my craft room doesn't work very well... but I'll try! Supper tonight is frito pie, so that's easy enough & quick.
I really must try making applesauce too... hmmmmm I only have a pear tree in my teeny tiny orchard, that didn't produce this year because of the drought.... but I can buy apples!
I've missed checking in here... so I'll stalk a bit longer before I leave from work & then try to catch up from home...
I have some apples that we aren't eating fast enough maybe tomorrow I'll try out a small batch of apple sauce. It was cold here last night so I think it would be ok to have the stove top on for awhile tomorrow.
