Add cornstarch and frozen pea pods then cook for another hour. Serve over rice with the following condiments on the side: coconut, peanuts, raisins and or craisins, sliced bananas and more chutney. This has become a family favorite and any company who has braved it has loved it (some people just aren't adventurous about food that looks different!)
YUM!!!!!!

Your description of those dishes cracks me UP!!! There's a WAR in my family about the appropriateness of jello with little fruit corpses stuck in it that has lasted decades. We are a family divided.

I'm scarred by jello (was forced to eat it when I lost teeth) and tapioca (forced to eat it following my appendectomy.

I really don't have anything against the cake, it was about the best thing on the menu. I wasn't fond of the other items and I guess it was the repetition that got to me....I didn't eat ham for YEARS until I realized it could be fixed in ways that tasted so much better....that reminds me of another recipe that my SIL makes Apple Butter Ginger Ham....now that is good ham!

Oh my....I think I have officially given up on this one. New job, my mother here from out of state, kids, husband out of town...I'm about to go NUTZ! The next card drive may be for Danyelle who is in a rubber room, trimming her toenails with her teeth!

I got one more card made today. I didn't really have all that much time alone and I did want to spend some of it staring into space enjoying the quiet.

I"ll catch up on sketches tonight and bust out soem cards tomorrow and hope to catch up.

Love coming home to a meal in the crock pot...kids are always STARVING after swim practice (I had a McD's coffee drink so I"m not so hungry myself but I'm sure I'll find room for something!)
Had a nice talk with my mom and the caregiver challenge reminded me to be thankful for my dad who has done such a great job rising to the challenge of helping out around the house, taking my mom to lots of her many appointments and just being a great listener and support to her. So, I guess that's why I made 3 of my cards today so I can get one in the mail to him!! Hats off to all who are there day-in and day-out supporting and loving people with chronic illnesses. I've known some people whose marriages and families cracked under the pressure and I'm so thankful for my parents' loving, stable marriage that is weathering the storm!

Well, for as much as I am on here you'd think I would have caught the initial chatter on HYCCT challenges for this month. Well, I keep seeing these gorgeous card w/ "HYCCT..." as the key word and I could figure out what was going on. So, I did a "HTCCT" search within the forms and just this weekend found out what it is all about!!!!! UGH. I am a little behind, and I don't care about winning the prizes. I just want to make cards for these people.

As many of you have read from some of my card descriptions, breast cancer has been very up close and personal for my family. My cousin and best friend was diagnosis with Stage III B breast cancer when she was 31. She had a few good years before it came back and even several more years living with chronic cancer. Unfortunately, she passed away this past January. She was only 41 and a remarkable person.

So, I feel it is my duty to continue supporting and uplifting those who are fighting right now!!

Sorry for the TON of uploads today! I just wanted to get them here b/c I LOVE a good challenge!!!!

fionna asked for the ham recipe so here goes

Apple Butter Ham

1 (8-10lb) fully cooked, bone-in ham half
~24 whole cloves
1 (15oz) jar apple butter
1 cup pure maple syrup
c brown mustard
1 cups ginger ale
1) Score fat on ham in a diamond design and stud with cloves Place fat side up, in a lightly greased 9x13 dish.
2) Combine remaining ingredients and pour evenly over ham.
3) Bake at 350 for ~2 hours on lower rack basting with pan juices every 15-20 minutes. Basting is key to fullest flavor.

Funny story related to the ham. My one SIL who is very meticulous, slow and deliberate in all she does, slaved over her ham one Christmas when we were all at the other SIL's house. My kiddos and SIL#2's husband were watching A Christmas Story marathon, uggh. Uncle Dan finds that movie HILARIOUS but I could live without it. Anyway Dan has a rambunctious dog that he's never bothered to train too well. SIL#1 takes slaved-over ham out of oven and sets it on counter to cool. Anyone who's seen A Christmas Story can predict what happens next. Bad-dog Parker attacks the ham. SIL#2 is practically in tears while Uncle Dan is practically in tears from laughing his head off. Not the finest family moment! Thought WWIII was going to break out. Anywhoo, I can never fix this ham without remembering that moment!

I make apple butter! That's because I like homemade so much better than any storebought stuff.

Did you want to know who makes it commercially? I see Musselmans around here a lot.

I'm almost caught up! Yay!!!! I think I'm 3 behind? Maybe? I'll have to count. Tomorrow is another crafty day! Archiver's to meet up with my stampin' girls for the morning and then back to the apt to make them into cards! I hope to be completely caught up tomorrow! Alison and I had a productive day today!

Mmmmmm.....we've made home-made Apple Butter.....hubby loves it! It's been a while though. I need to make my home-made Chokecherry Jelly and Sand Plum Jelly prolly next month! It's always more enjoyable when the snow is piling up!

BIG HUGS to all of you with dear friends and family battling breast cancer!!! It seems like it touches all of us somehow. We can hope someday it will be a thing of the past!!!!

Hi all! Busy times around here. I think I have three challenges, including today's, to do to be caught up. I got home from work tonight and just felt exhausted so I haven't done any stamping yet. I may try in a few minutes - we'll see!
For those of you struggling to keep up - don't stress! I'm sure the patients at MD Anderson will appreciate any and all cards you're able to send, whether it's one or 100!

Well, I saw going to sit down and do some black magic this morning, but instead I'm going to be dealing with a chalk disaster I don't even quite know how it happened...one minute I'm carrying them the next they're crashing onto my table. I don't know how I'll tell them all apart.

Making apple butter is a big event here in Hermann. Some actually cook it in a cauldron outside! Tourists actually come for the event. There are lots of apple trees (something I had never seen in Houston!). We have to remove one of our beloved maple trees that is dying and I told DH that I wanted a BIG apple tree to replace it.

No I want to make it myself - since we don't have apple trees around here, the brands that we get are pretty processed, mainstream stuff from big factories. Did you share your recipe?

Snow forecast here too...9 inches tonight and 4 more tomorrow. Temps around 13 degrees.

The problem is that all the trees still have their leaves...

Lydia...
I make my apple butter with the applesauce I make from apples from my trees. But you can use store-bought natural applesauce that has no sugar in it. I also make it in my crock pot. Doing it on the stove makes it too easy to burn...especially for me!

Crock Pot Apple Butter
2 quarts applesauce
2 cups cider
1-1/2 cups honey (I use less)
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice

Cover, cook on low overnight (8-10 hrs) or until dark brown color.
Remove lid and cook on low until thick. It should round slightly in a spoon and show a glossiness or sheen.
Pack while still hot in hot, sterilized pint or half-pint jars, leaving half inch headroom. Adjust lids and process in boiling water bath for 10 minutes. (ten minutes is for your altitude, not mine) Remove and let cool.

Simple!
