I know what your are saying about keeping the house going and getting the cards made. You would think that since I only have one kid home and she's 16, that I would have all the time in the world -- not so! I can't figure out what the heck is keeping me so busy....

Perhaps I should get off the computer? Nah... that seems drastic..

I think I might snag time for a cad after I get the dishwasher running. We've gone about an hour without any hurling so I think the kids might be settled for a bit.

Default Sweetcorn Chowder

We had one of our "meals in a bowl" soups tonight - DH doesn't usually want a proper dinner if he's been playing football.
Sweetcorn Chowder - serves 4

2 tblsp vegetable oil.
1 red onion, roughly chopped.
1 red bell pepper, seeded and diced.
2 cloves crushed garlic
3/4 lb potatoes diced (not too big, or they won't cook) - two large potatoes, say
2 tblsp plain flour
1 pint milk - I guess that's one and a quarter US pints, (2 1/2 cups)
1/2 pt chicken stock, vegetable stock or even water (1 1/4 cups )
2 ounces broccoli florets
1 can sweetcorn, drained (here a regular can is about 12 ounces)
3 oz Cheddar cheese, grated - not too familiar with American cheeses, something like Monterey Jack
Salt and pepper to season, and chopped parsley or coriander to finish.

Heat the oil in a large pan. Sauté the onion, pepper, garlic and potatoes over a medium heat for about 3 minutes, stirring often. Stir in the flour and cook for a minute, stirring constantly. Add the milk (preheated means less likely to go lumpy ) and the water / stock. Bring to the boil, add the sweetcorn, reduce to a simmer and cook for 10 minutes. Add broccoli and cook for another ten minutes or until vegetables are tender. (The original recipe calls for the broccoli to have the full 20 minutes, but that leaves it overdone for my taste!). Stir in 50 g of the cheese till it melts. Season to taste. Serve, and garnish with remaining cheese and parsley or coriander.
I put a bay-leaf in along with the milk and stock. But our bay tree died in the hard winter, sigh... Tonight we had cauliflower instead of broccoli because that's what was in the fridge.
If we're having it over two nights I only put half the broccoli in and make sure I serve it all, because I don't like the off-flavours it gives when it stays in the soup overnight. Then I just add some fresh-cooked when we have the leftovers.
It's a much lighter version than the one I used to make from the Joy of Cooking.

If your cheddar is anything like Dubliner Irish Cheddar I can get here I'd say sharp cheddar and not Jack

I bow to your superior knowledge of American cheese . I like it sharp, but that means trying to find a mature or extra mature cheddar here, the other ones are pretty bland.
We have a friend whose son grew up in Spain till he was about 4 - he couldn't get his head around Irish cheese when he moved over here. But papa, it's orange!!

I own three book son cheese. I have serious cheese love.

The sharper the better. If I fear that people will not want to be near me when I consume a cheese it's really not worth it to me LOL

Ummm - I like cheese, but too much of it doesn't agree with me.
We sometimes have Cyprus cheese breads for lunch - come to think of it, I might make some tomorrow if I can get decent mozarella in the local shop (car still out of commission). It's balls of bread dough (enriched with olive oil) rolled out into circles and topped with a filling of grated cheeses, eggs, dried mint and a little flour, and then with the corners pinched together.

Ohh you guys wanna know my fave super easy WW friendly potato soup recipe?


1 bag frozen potatoes Obrien (the one with the onions and bell peppers) ~ tho I've made it with just the regular hash brown cubed potatoes too

1 packet country gravy mix

1 box (32 oz) ff reduced sodium chicken broth

pot, broth in, whisk in gravy mix add potatoes simmer til hot. I usually blend it til smooth it with an immersion blender and I always add dried thyme, mustard seed and a bit of salt. I've also sauteed a shallot in the pot before adding everything.

Even if you add some cheese and bacon it's very low in points.

I am behind a bit more now too...........had to spend all day down in big town and take DD to get more art supplies/groceries. Hubby had to go with her to the financial office and do more paperwork....it's already time to register for Spring classes!

AND....................I got an Iphone!!!!!!!!!!!!! My very first!!!!!!!!!!!!!!! I made DS come with so he could figure it out first and then show me how to use it!!!!

No, when I went back I could tell the "s" just got out of whack....but I seriously was gonna google thinking it was a newfangled cheese! Have I mentioned I'm running on ZERO caffeine most days now????????????????????

Ok, taste test completed....the chowder was yummiliscious....I used cauliflower as that is what I had and sharp cheddar.....Y'all gotta try it....

Off to early beddy bye...more gardening.....tomorrow-repair privacy fence....Oh joy, joy...heehee....hope to do some cards in am before go out...

I don't add the extra ingredients Victoria mentioned, but I like to mash some of the potatoes once they get soft. It's a super easy recipe and it's yummy.

I'm still waiting on the 5 to be introduced before I upgrade. Hopefully mine will last that long. I don't like the box-iness of the 4 series.
