For those of you on fb here is a pic from my fundraiser last May. These were the chocolate cupcakes with marshmallow creme frosting

mmmmmmmmm.....I think the buttermilk is the secret ingredient....sounds wonderful!!! I CANNOT resist breads. Foodwise, the one thing I miss from the U.S. that they don't have here is maple donuts...oh, that and Taco Bell.

There is a local shop that has MAPLE BUTTERMILK DONUTS!

Ooooh....donuts....there is a cider mill in eastern Ks that makes apple cider donuts....They are yummiliscious....will have to go dig that recipe up now....durn you.. I was doing good resisting....LOL!! well, only because I have fresh hot 12 grain bread in front of me with honey butter oozing on top......Heaven...

Oh I LOOOOOOOVE cider donuts! We try to get them when we go apple picking every year (well, every year we live somewhere that has an orchard, LOL!)

I keep hearing about apple cider donuts....nowhere around here though.... I think I'd love them!!!! Yeah...like I've EVER met a sweet treat I didn't like???!!!!

DH is giving DS his first lesson on carving a turkey! So the kiddo is 18 and I think DH will be happy to turn that task over now!

I am now caught up and have a box of cards ready for the post office on Monday!
Tomorrow I need to make an engagement card; haven't made any of those for ages so I'm not sure what I have for supplies.

I'm way behind on challenges. But figured I'd best finish the outside work yesterday....this may be our last gasp gorgeous weekend. It will be icky by the end of the month for sure!

I am behind too Lisa - hubby has a 4 day weekend and though I love him dearly it is easier to craft when he is not home. We have time to catch up.

Default Caramel Apple Crisp

I made this last week and - oh YUM! dh and I loved it. We topped it with a little Vanilla Bean ice cream.

Caramel Apple Crisp

Ingredients

Apple Filling:
5 large Granny Smith apples - peeled, cored, and thinly sliced
1/2 cup white sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1 tablespoon lemon juice
1/4 cup water

Crumble:
1 1/2 cups all-purpose flour
1 cup brown sugar
1 cup quick cooking oats
1 cup butter, softened

Caramel Sauce:
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk
Directions

Preheat oven to 350 F (175 degree C).
In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

Oh yum Karen!!! And here MIL and I just finished coring, peeling and slicing apples for an Apple Crisp. But I had no computer near so I didn't look up any recipes...just threw it together.....brown sugar, sugar, butter, oats, cinnamon and allspice. Smells good!

Huge projects done.....so today and tomorrow morning will be cleaning, cleaning, cleaning! I'm not sure if I'll survive...but if I do, I'll be stampin'!

I haven't had cider donuts but I am lucky enough to live near the only remaining Spudnuts. mmmmmmm, may have to stop there before today's soccer game. lol

Hi Ladies
I am new to all of this. I have enjoyed many of the SCS Tutorials but never have joined any chats, forums, challenges etc. Im happy to jump aboard this very important monthly event. My mother is a Cancer survivor and so it does hit close to home. I cant wait to jump in and create for all those lovely ladies.
And thanks for the Pumpkin Bread recepi, cant wait to try it out. Sounds Delish!!!!

Well - Victoria's Brown Betty has just passed the DH test with flying colours - he thought it was exceptional. Now, he might also have been pretty hungry by then as I was just about to turn the oven on when his mechanic friend arrived to collect the car, so we ended up eating it an hour later than planned. But still - while he always appreciates my cooking he doesn't often go in for superlatives like that .
- I just used windfalls, and just like V said with her Golden Delicious, some were solid and some were mush to make it nice and juicy.
So, looking at the Apple Crisp recipe just above, are Golden Delicious what y'all would normally use as cooking apples over there?

This is what we had for lunch - DH wasn't hungry when he got home, too tired after not much sleep I think, and I wasn't going to waste good steak and chips on him .
This is more or less the version from Anna Thomas' "From Anna's Kitchen" - I think we eat from that book at least once a week. It's a lower fat version than the French original, with a fresh tomato sauce providing most of the cooking liquid.

Ratatouille: six servings as a main diah

I used two small aubergines / eggplants, two courgettes / zucchini, 2 onions, 1 each red and green bell peppers, 4 large tomatoes for the sauce and two at the end, plus some basil, parsley, garlic and a spoonful of balsamic vinegar.
The aubergines, courgettes, onions and peppers were all cut into 1/2" dice. The tomatoes were cut a bit larger.

The tomato sauce was simply 4 large tomatoes skinned and coarsely chopped, and simmered for about half an hour in a little oil with a crushed clove of garlic and some chopped basil till it was reduced.

While I made the sauce I degorgéed the aubergines; in a plastic colander I sprinkled them lightly with salt and left them for half an hour. Originally this was to remove some of the bitterness and excess liquid. A bit like scalding milk being a hangover from when it was really needful, I think that most modern varieties are a lot less bitter then their early predecessors, and personally I don't bother doing it with the courgettes. I do, however, think it helps make the aubergines a bit less absorbent, so I usually do it with them. After this rinse them and pat dry with kitchen towel.

Heat 1 tblsp olive oil in a large pan. Add the chopped onion and a clove or two of crushed garlic, and fry gently for about 7 minutes, till soft. Add the courgettes and aubergines with a little salt and continue to fry gently, stirring well, for another 7 minutes or so. Add the peppers and the tomato sauce, along with some salt as needed, and pepper. Cover and simmer for about twenty minutes. I usually add a bit of water, as I like mine quite moist. Add the tomatoes, chopped basil and parsley and a tablespoon of balsamic vinegar. Taste and adjust the seasoning if necessary. Cook for another 5 minutes and serve.

In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).
