Heart SAUSAGE & GRITS... yummy!

This recipe is awesome. The is a great for breakfast or brunch which you are having company over or just for your family.

RECIPE
1 cup uncooked grits
2 cups grated Cheese
1 pound ground sausage
10 dashes Tabasco
1 onion, chopped
1 teaspoon paprika
two 4.5 ounce cans green chilies, chopped
1/4 cup chopped fresh parsley
8 tablespoons (1 stick) butter
2 eggs, beaten


Preheat oven to 325 degrees. Cook grits in 4 cups salted water until thick. Saute sausage, breaking it into small pieces. Saute onion in sausage fat; drain. Add onion and chiles to sausage. Add butter, eggs (slowly, so you don't cook them), cheese and Tabasco to grits. Combine grits mixture with sausage mixture. Pour into a 13x9 inch casserole dish and garnish with additional cheese, chilies, paprika and parsley. Bake for 1 hour. Can be refrigerated up to 2 days before baking. Freezes well.

Evening all! I have an exciting evening of takeout, baseball and stamping on my agenda. And I have to watch 20/20 later because my former coworker is on. He's a reporter and they are interviewing him about a story he's been involved in.

It has been so busy lately that my family motto could be "Hope You Will Cook Something" All too often it has been free-for-all meals. I love to cook, but lately I've been on the go to much. Here's a quick dip recipe that I've done a lot over the years. If you can get people to try it (it is rather brown) they'll be hooked and it is super easy and quick with things you can keep in your pantry.

Speedy Black Bean Salsa
1 can black beans, drained
1 can Mexican style stewed tomatoes (I use the mild type with green chiles but if you like it hotter you can use the Zesty ones with jalapenos)
juice of a lime
1 1/2 tsp ground cumin

Put all into blender and process to desired consistency (I go fairly smooth, but you can keep it chunkier if you like)
Serve with tortilla chips.

I just found this thread this morning and I have just been reading through everything and collecting recipes. They all sound great. I've been telling my husband he needs to eat more protein so I will make the quinoa recipe for him as a side dish some night when he's home for dinner. (Guess I should say when I'm home to cook dinner, that is usually why we eat out or have a heat and serve meal.)

Just a quick howdy! Huuuugely busy with the home improvements and running errands. Big town is an hour away one way...so when we have to go get stuff.....it...umm...takes a while!

Our HIGH is supposed to be 38* tomorrow and snow on and off all day! We'll be cooking a big turkey dinner and hopefully I'll get some good stampin' time in too!

I see more fun chatting and recipes! I'll catch ya laters!

Homecoming dance tomorrow. Fingernails done, dress at friend's getting hemmed, soccer game at 11am, hair at 1:45, toes at 3:00, eyes at 4:30. I sure hope it all goes as planned. LOL!

While I'm certainly glad for the moisture, I have so much to do to put garden to bed for winter....but alas, suppose to rain off and on and the WIND!!! Yikes....even for Ks, it's wild....so guess I'll have to stamp and get caught up...... Now that todays is posted, I'm 4 behind.....gotta go get new battery for camera also so I can post....

hmmmm....thinkin it is a good day to bake bread also.....

My daughter wore shorts and a t-shirt to her homecoming dance -- the girls are all bummed that they don't have a "dress up" dance. The boys, however, are thrilled LOL!

Enjoy homecoming!

Sheri -- it's supposed to be 80 in upstate NY today -- unheard of! I'm waiting until the weather is cooler to put the gardens to bed because the bees are crazy with this heat!!

Snow! Nooooo, it's too early from snow.
I'm thankful it wasn't too windy when we were out on the motorbike last night (saving €4 in tolls compared to the car and beating a humungous traffic jam), but I saw two trees down just at the end of our road this morning, so it must have got even windier after we got home.
Stamping and baking sounds like a good option for you, Sheri. DH is at a bike rally, so I don't really want to bake or I'll eat too much myself.

Lee, you can keep your snow....if I have to take your wind I will but I'm liking these 80 degree days after all the 100 degree ones of the summer.....hasn't started raining so tried to get out but about blew over, and all I got done was water the trees I planted this week.

Did get 2 cards done, only 2 behind now.....

You know this HYCCT drive is making for some interesting conversations......I went to the PO and was talking to the Post Mistress of our small town PO and talking about mailing/packaging options for what I was doing. We got to talking and she told me she lost a daughter to breast cancer years ago and then she had it herself and had a double mastectomy. Just heart-breaking and we'd never talked about that before so I never knew that! I hope, hope, HOPE, HOPE we can kick this yet and get a CURE!!!!!!!!!!!

G'mornin'....No, g'afternoon Lee! We are not getting snow yet. Just rain. Don't want snow today or tonight. It can wait a week or so until the leaves change and fall off. My hubby would have to work all night shaking snow off the trees on 12 acres of potted trees at our nursery. Not fun! So keep the snow for now.

However, I betcha I look west in the morning and can see the snowline.

I still have to get the last couple of days set up with envelopes and cello bags, but I'm up to date on the actual challenges.
It's wet and windy here but at least it's warm enough that I haven't needed to put the heat on.

I'm settling in for a few hours of card making. Let's see if I can get caught up. Kids are "cleaning" their room and DH is cleaning up the garage.

We did head out to get more work on the car this morning and then a local pumpkin farm. It's gorgeous here today. I'm not sure it's even hit 80

here are my boys amid the pumpkins

A sweet photo of your two very cute little guys, Victoria - looks like a beautiful fun day!!!
Just got my internet back, I would have been in a panic if it was out tomorrow since I'm hosting the challenge!
Just had to stop typing and go catch a big fat spider with our spider vac - I hate squishing them, this thing vacuums them into a tube and then I dump it outdoors. Yuk.
Trying to think of a yummy Northern Irish recipe you all might enjoy that would be easy to convert from grams and ounces to cups, etc.
I'm thinking maybe Banofee pie - toffee (soft and squishy, not hard toffee) and bananas and cream??!!

Once I tried to only make the topping LOL
It was hard as a rock. It tasted good but was too hard to really eat! I'm pretty sure I only make Apple Brown Betty because of the top

OMG Victoria they are precious!!!!!!

We've got a turkey in the oven and it's smellin' good! Of course that's also amid the paint fumes and carpet glue fumes and cleaning solution fumes!!!! This overhaul is gonna kill me but the house is FINALLY gonna be almost done!!! Just a couple of the rooms eventually will need finished! WHEW!!!! I'm sooo beat! But gotta go peel taters now so we can have yummy, creamy mashed taters!

I think I'll prep the Apple Crisp late tonite and then pop it in the oven for brekkie tomorrow!

Confession, Sabrina, I never make soda bread at home because it's so good and inexpensive in the bakeries!
I cleaned up my card making area today too - wow, do I ever make a mess!!
And then get frustrated not being able to find stuff.

So, if you did that, you could just do one or two apples, you'd get the juice and flavor!

What kind of flour do you use, the regular stuff and add baking soda, or anything special?

all purpose, pinch of salt, baking soda, butter milk.

Man I love it. I have to only make it once a year or I'd eat way too much. Love it toasted with the butter all melty! It's almost creamy inside with the crusty outer part. *love*
