Shouldn't there be a recipe forum around here with the number recipes that people "share" and I "can't find!"

LOL. She sounds like my MIL, who was born and raised near Erie, PA but has been living in Florida since the late 1980s.

I see you're in the SLC area... GORGEOUS place! I'd love to go back and visit there again.

Italian Crock Pot Chicken

1 to 1.5 lbs. boneless, skinless chicken breasts
1/2 stick butter
1 envelope Italian dressing mix
1 can cream of chicken soup
1 8-oz. package cream cheese, softened

Melt butter; pour over chicken in crock pot. Sprinkle with dry dressing mix. Cover and cook on low for 4 hours. Blend soup and cream cheese; pour over chicken. Cook an additional 30-45 minutes. Serve over pasta or rice.

(I usually cut the chicken into approx. 1.5" cubes before putting it in the crock pot.)

Thanks! I don't have many chicken based crock pot recipes (I am a lacto ovo vegetarian) but i have a few beef based ones for my hubby. Variety is nice. Amanda Sewell (Inkspirations) has a recipe on her bog for a YUM-MAY sweet & sour meatballs if you wish to check it out sometime. I have tried a few of her recipes, my hubby has loved them all, especially the bacon quiche cups - perfect for breakfast or lunch or supper, anytime! And very portable for those grabbing a bite as they head out the door or for kids to eat in the backseat on the ride to school...

You all are talking dinner and I haven't even had breakfast yet - I need to go get some oatmeal. DD helped me make a beef stew yesterday so he is good to go - I'm still not feeling all that great and nothing sounds good, however, I'm sitting here waiting for some good news.

HOLY COW! You take a night off and go to dinner and then it takes me an hour to catch up. But totally worth it when I saw my name on a prize list!!!! This was such a rewarding challenge and I have just recently begun to participate in the challenges. I loved the letter from MD. Thank you all at SCS for this.

I'm mad now because the person that "borrowed" my crockpot actually abducted it and is living happily in sin with it while I sit here with just an oven.

I have made this rec ipe...but sadly, my family doesn't care too much for it. Thus the need for a new idea.
