gail, if you have a cold storage place for the tomatoes you can ripen them a little at a time putting them into a brown paper sack with some apples from the grocery store ( look for the ones with white streaks on the skin ~ don't wash that off when you get home, its ripening agent...) so put the apples and green tomatoes in the sack together... (as you need tomatoes. or if you want to ripen a bunch to make salsa or something.
Thanks. I could put some in the garage for now. I've found a ton of recipes for green tomatoes so I might just play around for fun. My grandma made something called Green Tomato Cha Cha that I'd like to make for my dad.
