YUMMM! I make that all the time, actually

LOVE it! Ok, so my sister gave me the most A-MAZING recipe today. If you like Swiss cheese and chicken (or even if you like Chicken and dumplings but don't want the carbs!) this is for you:
4-6 boneless skinless breasts
2 cans cream of chicken soup (you can use reduced fat/sodium if you'd like)
4-6 slices of swiss cheese
1/2 bag garlic& butter croutons (I was FLOORED that they're only 4 carbs each per serving-I'd have thought they'd be much more!) My sister also drizzles just a LITTLE butter over them.
Lay a little soup on the bottom of the crock pot. Place down chicken, cover w/ swiss cheese slices and then pour the rest of the soup over that and then top w/ the croutons.
Watch as the croutons turn into almost like a stuffing/dumpling texture and serve- OMGOSH!!!! SOOOO delish, and not as high fat/carb as one might think! The kids DEVOURED it, too!
