to the soup recipe. BTW I never use the whole pound of bacon, more like 6-8slices or whatever fits into the bottom of my kettle and I pour off most of the fat before the next step. I also use fat free half and half and it is still plenty creamy, hmmmm maybe the 6 cups of cheese have something to do with that! If you use the light beer it has a much milder taste. I've also used Guinness for a whole different, more bold flavor. I like to make crostini to float in the soup.... we tried the Wisconsin thing of putting popcorn in, but it just gets soggy and I wasn't impressed.
