The lemon cake was voted a success so here is the recipe....it is a pound cake that has been altered slightly.
Lemon Bliss Cake
1 cup unsalted butter
2 cups sugar
1 tsp salt
4 large eggs
2 tsp baking powder
3 cups all-purpose flour
1 cup milk
finely grated rind of 2 lemons
1/3 cup freshly squeezed lemon juice
3/4 cup sugar
Preheat ove to 350. Lightly grease bundt pan. Beat butter, sugar and salt till combined and then on high for 2-3 min till fluffly. Add eggs one at a time, beating well after each addition. Add the baking powder, then add flour alternately with milk, starting and ending with flour. Mix until smooth, and stir in lemon rind.
Spoon batter into pan, smoothing top with a spatula. bake for 55-60 min or until a cake tester inserted into center comes out clean. While cake is baking, make glaze by stirring together the lemon juice and sugar. set it aside. Remove cake from oven, set on rack and after 5 min, turn cake out on plate. poke many holes in top of hot cake with cake tester or toothpick. Stir the glaze to combine, and immediately brush it on the hot cake, cont to brush on glaze until all glaze is absorbed.
I served it with cut strawberries....
