And yes, Queso Blanco is a well kept secret down here too. I *think* most places here use Asadero, but I think the secret is to make a bechamel like you do for mac & cheese instead of just mixing the cheese and the chilis.

I'll have to check into that Asadero.. thanks for the tip. And great day, I don't even know what bechamel is, so I'll look that up to - LOL - my mac n' cheese comes out of a box. I have a lot to learn... maybe there is a reason I can't find that recipe.
