Maybe I should put all these little recipes into a Hope You Can Cling To Cookbook!! At the end of the month I can put out a PDF with all of them. What do you guys think??
And yes, Queso Blanco is a well kept secret down here too. I *think* most places here use Asadero, but I think the secret is to make a bechamel like you do for mac & cheese instead of just mixing the cheese and the chilis.
