Our local Mexican restauarant has THE BEST, but for some reason the waiters all of the sudden 'no comprendo' when I ask them what kind of cheese they use... hmmm... secret I suppose. I've seen some recipes online that use Chihuahua Cheese - I don't think any grocery stores see that here. So, if you have a good one, I'd love to try it!
