That's interesting, I've never heard of calabacita squash. Around here, we eat a mexican side dish called "calabacitas", which is a combination of squash, corn and green chili. It is delish. Maybe that's the type of squash they use over there? We use pretty much any variety.
Some of the booths at the Farmers Market had it labeled as 'Calavacita' and some said 'Calabacita'. They are light green with dark specks, round and fairly small. The seeds inside are edible. I did not peel mine before cooking.
I ended up slicing it into rounds and breading it with a beaten egg and panko bread crumbs. I baked them on a cookie sheet for about 30 minutes. OH MY!! They were SO good!! I bought more yesterday and we're having that with dinner tonight. I've never seen them in stores.
