It's sweet potatoe season here in Texas. I love the darn things. One of the few really good for you things I like. Hate baking and peeling them, though. The other night I discovered an incredibly easy way to prepare them because I didn't have enough time to bake them. Here goes.
2 large sweet potatoes peeled and cut into chunks
1 stick of butter
2 tbsps of Splenda
Boil sweet potatoes in water with a little salt until the potatoes are soft.
Throw in a stick of butter and two tablespoons of Splenda and mash like regular potatoes. This is good enough to eat for dessert!
